Meatloaf Muffins

1lb extra lean ground beef
1 box Stove Top Stuffing Mix
1 cup water
2 egg whites

Mix together and divide into 12 muffin cups that have been sprayed with non-stick cooking spray.

Bake at 350 degrees for 35-40 minutes.

This recipe is one that I make a lot. It is quick and easy and my family loves it. There are many different versions of it. Some use 2 lbs of meat for a 4 pt muffin. I also sometimes use 1 egg instead of 2 egg whites. You can also spice them up as you like. I like to use worchester sauce and onion flakes.
